Baked Cream cheese Spaghetti

Ingredients:
12 oz. spaghetti
1 (28oz) Jar spaghetti Sauce
1 lb. beef
1 t Italian Seasoning
1 garlic clove, minced
8 oz cream cheese
1/2 c parm cheese

Preperation:
preheat oven to 350 degrees

Brown meat and stir in spaghetti sauce. Set aside.

Cook spaghetti, drain and add cream cheese, Italian seasoning and minced garlic.  Stir until cream cheese is melted and noodles are coated.

Lightly grease a 9x13 pan. Spread a small amount of meat sauce in bottom of dish.  Put spaghetti on top of sauce and top with remaining sauce- sprinkle on cheese.

Bake 30 min. I served with garlic bread and salad! :)

Cheesy Chicken Crescent Roll Casserole

Ingredients:
2 (8oz) cans crescent dinner rolls
1 (10oz) can cream of chicken soup
3/4 C grated cheddar cheese
1/2 C whipping cream (Can use milk for a healthier version)

Filling:
4 oz Cream cheese
4 T butter, softened
1 T garlic powder
1/3 C onion (chopped, greens of onion)
1 rotisserie chicken
3/4 C grated cheddar cheese
1/2 t salt and pepper
4 T mayo
2 C cheddar cheese (for topping)

Preperation:
Set oven to 3550 degrees, and butter casserole dish

In sauce pan, mix whipping cream (or milk), 3/4 C cheese and chicken soup, heat just until cheese melts, do not boil and take off heat.

FILLING: cream cheese and butter must be soft.  Mix in a bowl, then add garlic powder.  Add chopped chicken, onion and cheese and mix well.

Add in mayo- mix (add more if dry)

Unroll rolls and place mixture on top of ech and roll up.  Drizzle soup mixture at the bottom of pan. Drizzle with more soup mixture and add 1 C of cheese.

Bake 30 min.

I served with a salad and it's delicious!

Salsa Verde Chicken Enchiladas

Ingredients:
1 cooked rotisserie Chicken
2t EVOO
2t minced garlic
1t lime zest
2 C mexican salsa verde
1/2 C sour cream
1/2 C shredded cheddar and mont jack cheese
1/4 C cilantro
6 flour tortillas

Preperation:
Heat a large skillet over medium heat, add EVOO then cook garlic and lime zest for 30 seconds.  Add salsa verde and heat through.

Remove from heat and stir in sour cream, chicken, 1/2 of the cheese and 1/2 cilantro.

Reserve 1 C of sauce for top of enchiladas.

Add 2-3 T of reserved sauce to bottom of a 9x13 pan.

Add 3T of chicken mixture to the center of a tortilla, roll and place seem down.  Cover with sauce and cheese.  Bake 350 degrees for 25 minutes and top with Cilantro.

Crock pot chicken and dumplings

Ingredients:
4 (frozen) chicken breast
1 onion, chopped
2 cans campbell cream of chicken soup and mushroom soup (1 of each)
2 T butter
1t salt
2t black pepper
1T Oregano
2 cans chicken stock (I fill up soup cans with water and use)
1 can pillsbury Grands Buttermilk Biscuits

Preperation:
Put everything in crock pot, but biscuits.

Cook on low 7 hours.  Shred chicken with fork.  About 1 hour before serving, tear biscuits into small 1"pieces.  Stir gently into crockpot.  If it feels too thick, you can add water.

Allow to cook 1 more house after you put in biscuits to allow them time to cook!

These are so good!  Serve with a heaping of vegies!

Sausage and Cream Cheese dip

These are delicious served with Tostito scoop chips!

Ingredients:
8oz box cream cheese
1 lb. sausage, cooked and crumbled
1 can diced tomatoes

Prep:
cook sasauge and add cream cheese (melt) and tomatoes, serve!

Sausage and Pepperoni Puffs

Ingredients:
3/4 C flour
3/4 t baking powder
1/2 t garlic powder
3/4 C milk
1 egg
1 C mozarella cheese
1/2 C pepperoni
1 C sausage (cooked and crumbled)
1/2 C pizza Sauce

Prep:
Preheat oven to 350 degrees and grease a mini muffin pan (this will make 24)

In large bowl, whisk together flour, garlic powder and baking powder; whisk in milk and egg. Stir in mozzarella, sausage and pepperoni and let stand for 10 minutes.

stir the batter and add to pan, bake until puffed and golden (25 minutes)

Heat pizza sauce and use for dipping!

These are delicious! Will make 24 mini's

Cheesy, bacon, Ranch Bread

Ingredients:
1 loaf sour dough bread (round)
8-12 oz cheddar cheese, thinly sliced
2 oz bag oscar meyer real bacon bits
1/2 C butter, melted
1 T Ranch dressing mix

Prep:
Cut the bread into diagnal slices, don't cut through the bottom!

Place slices of cheese in cuts (I use fresh deli sliced cheddar cheese (1/3 lb. sliced thin!)

Sprinkle bacon cits on bread, in between slices.

mix butter and ranch dressing mix- pour over bread.

Wrap entire loaf in foil and place on baking sheet.

Bake 375 degrees for 20 minutes, unwrap and bake 15 minutes.

Brownie Batter Dip

Ingredients:
8 oz.cream cheese, softened
1/2 C butter, softened
2 1/2C Powder Sugar
5T Flour
5T Cocoa powder
2T brown sugar, packed
3T Milk
1t Vanilla

*Serve with: Vanilla wafers, fruit or graham crackers

Preperation:
Beat cream cheese and butter.  Add powder sugar and 1T milk until combined.

Add flour, cocoa powder, brown sugar, vanilla and 1 T milk.  Beat until smooth.

Add remaining powdered sugar and milk alternately until dip reaches desired consistency!

My Grandma's HOMEMADE ice-cream

This is a sure summer hit!

Ingredients:
*This can be changed to make vanilla, peach, oreo, strawberry, icecream!

6 heaping T cocoa (for chocolate ice cream)
1 can evaporated milk
2 C sugar
2 eggs, beaten
2 C whole milk (can use skim, for low fat!)

Prep:
put above in pan and stir good before turning heat on.  Turn heat on high and stir constantly with a wisk a nd bring to just a boil and remove at once!

Stir in 2t Vanilla extract and put into the refrigerator to let cool.

When ready to make ice cream, dump mixture in freezer container (Ice-cream maker) and fill line with milk.

If you use 1 can evaporated milk, put that in before regular milk.

Around the container of the mixture, add rock salt to make it freeze a nd turn on your machine until it stops...enjoy!
