Taco Stuffed Shells

Ingredients:

1/2 C bread crumbs
1 T oil
1 onion, diced
2 cloves garlic
1 lb ground beef
2 T taco seasoning
1 C tomato puree
1 C corn
1 C black beans
4 oz cream cheese
hot sauce to taste
salt/pepper to taste
1 T butter, melted
1 C salsa, I use mild
1 lb large pasta shells/cooked
1 C cheese- mexican shredded

Prep:

Heat oil in a large pan over med heat

Add onions, and saute until tender (about 6 min)

add garlic and saute until fragrant, about a min

add ground beef and cook until brown

add taco seas, tom puree, corn, black beans and cream cheese.  cook until cream cheese has melted

season with hot sauce, s/p

spread the salsa into large bakikng dish, stuff the shells with beef mixture and place them in salsa

mix butter into bread crumbs and sprinkle onto shells, followed by cheese

bake 350 for 25 min.

Chocolate Eclair Cake

Ingredients:

1 box graham crackers
1 lg french vanilla pudding box
cool whip
chocolate frosting

Prep:

Lay graham crackers to cover bottom

layer pudding

Layer graham cracker

layer pudding

graham cracker

chocolate icing (I warm it first)

then refrigerate prior to serving

Pizza Casserole

Ingredients:

1 lb hamburger
1 (14oz) jar pizza sauce
1 8oz pkg shredded mozarella cheese
3/4 C bisquick
2 eggs
1 1/2 C milk

Prep:
Brown meat, place in 8 x8 dish and top with pizza sauce. 

Place cheese on top of sauce

mix bisquick, eggs, milks and beat until smooth.  Pour on top of cheese.

Bake at 400 for 35 min

Frito Taco Bake

Ingredients:

8 oz crescent rolls
2 C corn chips
1 1/2 lb hamburger
1 (15oz) can tomato sauce
taco seasoning
1 (8oz) sour cream
1 (4oz) shredded chedd cheese

Prep:

Unroll dough, press in pan.  Sprinkle with 1 C chips, set aside.

Cook beef

(add in tomato sauce and taco seasoning.  Bring to a boil. reduce heat, simmer 5 min and spoon over chips. Top with sour cream, cheese and remaining chips.

Cook, uncovered for 25-30 min.

Go-to dish for friends when they have surgery, babies, etc.

This is a great go-to dish to bring to someone for a meal!

4-6 raw chicken breast, new potatoes and green beans.

Arrange in 9x13 dish

sprinkle with packet of italian dressing mix and top with a melted stick of butter.

cover with foil and bake at 350 for 1 hour.

Serve with rolls.

Choc chip cookie dough dip

Ingredients:

Vanilla wafers (for dipping)
1/2 C butter
1/3 C brown sugar
8 oz cream cheese, softened
1/2 C powder sugar
2 t vanilla extract
3/4 C mini choc chips

Prep:

Melt butter in pan and dissolve brown sugar into butter.

Cream together cream cheese and powdered sugar.  Add in butter mixture and vanilla.

Mix together.

Stir in chocolate chips.

I serve with vanilla wafers for dipping! YUM!

Frozen Banana Bites

Ingredients:

3 bananas
1/4 C milk chocolate chips
1/4 C PB
coconut flakes

Prep:

Heat up PB and choc chips in microwave.  Stir until smooth.

Dip pieces of banana to cover, in chocolate and place on parchment paper. Sprinkle with coconut and freeze 1 hour before serving.

French toast overnight!

This is a great dish for when you have company! Make it the night before and pop it in the oven the morning of for breakfast!

Ingredients:

1 stick, melted butter
1 loaf sliced french bread
1 1/2 c milk
3/4 c brown sugar
6 eggs
1 t vanilla

Prep:

In 9 x13 pan, mix butter (melted) and brown sigar.  Place french bread flat over butter/sugar mixture.

Mix eggs, milk, and vanilla with hand mixer.

Pour over bread, cover and fridge overnight.

Bake at 40 min. at 350 (covered) then 15 additional minutes (uncovered)

Sprinkle with powder sugar and serve with syrup

Cream Cheese Crock pot chicken

A easy, yummy, mexican-type crock pot recipe!

Ingredients:
bag frozen chicken breast tenderloins
8 oz block cream cheese
1 can black beans, drained
1 can corn, drained
1 can rotel

Prep:

Put frozen chicken in crock pot and put cream cheese on top of chicken.

Dump in drained and rinsed beans, corn and rotel.  Cover and cook on low 6-8 hours.

Stir ing every couple hours.

Shred chicken (when done)

After 6 hours: turn crockpot off and let it set for 30-45 min to thicken and serve over rice!

The next night, I make tacos out of the leftovers to get a second meal out of this!

Crockpot pizza casserole pasta

Ingredients:

1 lb. Rigatoni pasta (uncooked)
2 Jars tomato sauce
1 t dried Oregano
1 lb beef
1 lb Italian sausage
1 onion, chopped
1 green pepper, chopped
2 C mushrooms
4 C shreddewd mozz cheese
pepperoni for topping

Serve with: French bread

Prep:

In skillet, brown beef and drain. set aside.  Do the same with sausage.

Mix the sauce, uncooked pasta and oregano in large bowl until pasta is well coated.  Spray crock pot with cooking spray.

Now make layers using 1/2 of each ingredient.  Order: Pasta, beef, sausage, onions, peppers, mushrooms, cheese then place pepp on top and sprinkle with cheese. Cook on low for 6 hours.

Nutella Rice Crispy Treats

Ingredients:

6 C Rice crispy cereal
1 (10.5 oz) bag mini marshmellows
1/4 C butter
1 C nutella

Topping:
1/2 C milk choc chips
1 C Nutella
1 T shortening (crisco)

Prep:

Measure cereal in large bowl and set aside!

Melt butter and marshmellows together until smooth

Once marsh and butter melted together add nutella and stir until combined.

Pour marsh over cereal.  Stir to coat evenly and press into greased pan.

Topping: Heat nutella, choc chips and shortening in pan over med-low heat until smooth and spread on top.

Stir a nd set in fridge to set up.

Paul Deen's baked Chicken Salad

This is so delicious and a great light, summery meal!  I serve this with Celery sticks and crackers!

Ingredients:

2 T Lemon Juice
1/2 t pepper and salt
1/2 C Almonds (I omited this)
1 C diced celery
2 C chicken (I used a rotisserie chicken)
1 C mayo
1 C grated sharp cheddar cheese
2/3 C crushed potatoe chips

Preperation:

Preheat oven to 350 and spray 9 x 13 pan with pam

In large bowl, mix chicken, celery, almonds, salt/pepper and lemon juice, Mayo and cheese.  Place the mixture in dish.  Spread chips on top.

Bake 25 minutes or until bubbly.

Warm Bean Dip

Ingredients:

Tortilla chips (for dipping!)
8 oz pkg cream cheese, softened
1 C sour cream
2 (16oz) cans refried beans
1 pkt Taco seasoning (or you can make homemade, my recipe is below!)
2 C shredded cheddar cheese
2 C shred. monterey Jack cheese

Prep:

preheat oven to 350

I serve this with tacos!

Mix together cream cheese, sour cream.  Then mix in refriend beans and stire in taco seasoning.

Spray 9 x 13 baking pan with cooking spray.

Spread mixture on bottom of pan.  Top with cheeses.

Cook 30 min.

Mac Salad

This recipe is a HUGE hit and so many people have asked me for this!

Ingredients:
2 C macaroni, cooked in salt water, rinsed with cold water and drained well.

Add to cooled mac:
1/2 C celery (diced small)
1/2 C green pepper (diced small)
1/4 C red pepper, diced small for color
1 C sweet onion, diced small
2 cucumbers, diced small
1 firm, ripe tomato, diced

Mix all the above together and add:
1/4 C mayo
1 T Catalina salad dressing
1 small pkg of Sugar
and a dash of whipping cream (secret ingredient!!)

Mix well and chill.  Garnish with parsley, cucumber slices, egg, etc.

This is a sure hit for any gathering!!

Crock pot Italian chicken

Ingredients:

Farfalle pasta (1 box)
1 pkt zesty (dry) Italian dressing
1 8oz cream cheese (softened)
2 cans of chicken noodle soup

Prep:

Place chicken in crock pot and sprinkle with Italian dressing.

Combine cream cheese and soup in a small pot over low hear and pour over chicken.

Cook on low for 4 hours.

Cut chicken and throw back in crock pot and stir into sauce.

Serve over pasta

Crockpot rootbeer pulled pork

This recipe is great for those that work! I love love LOVE crockpot recipes!  I fix them the night before or early in the morning, start that morning on the way out the door and by the time you get home, it's ready to go!

Ingredients:

1 2lb. pork tenderloin
1 12 oz can root beer
1 18oz BBQ sauce
hamburger buns

Prep:

Put pork in slow cooker and pour root beer over meat.  Cover and cook on low for 6 hours or high for 4.

After pork has cooked, drain rootbeer.

Shred the pork and place it back in the slow cooker.  Pour the BBQ sauce and stir to combine.

Serve on hamburger buns with slaw

Homemade Taco Seasoning

Ever needed Taco Seasoning but can't find it, or forgot to purchase it?? I came up with an amazing "Taco seasoning" and it's cheap too!

Mix the follwing together:
1T Chili powder
1/4 t Garlic powder
1/4 t red pepper flakes
1/4 t onion flakes
1/4 t Oregano
1/2 t Paprika
1 1/2 t Ground Cumin
1 t pepper
