Oreo, Chocolate Chip brownies

Ingredients:
1 C unsalted butter, room temp
1 C sugar
3/4 C brown sugar
2 Eggs
1 t vanilla extract
2 1/2 C flour
1 t baking soda
1 t salt
2 C chocolate chips
1 pkg oreos
1 pkg brownie mix
1 small container dulce de leche

Prep:
Preheat oven to 350 and line a 9x13 pan with parchment paper

Cream butter and sugar until light and fluffy.  Add eggs followed by vanilla and mix well.

Add flour, baking soda and salt and continue to beat until well combined. Fold in chocolate chips.

Press cookie dough evenly then place oreo and dollup dulce de leche on top.

Prepare brownies and add on top- bake 40 minutes.

This is delicious served with vanilla ice cream or milk! Makes a lot!

Oreo Rice Crispies

Ingredients:
1 16 oz pkg oreos
5 C large marshmellows
4 T butter

Prep:
butter pan a nd line with parchment paper, butter paper and set pan aside.

Ground oreos in food processor

In microwave safe bowl, melt butter and marshmellows until puffed (about 2 min) stir in oreos until combined.

Transfer to baking pan using wax paper, press mixture even in pan.

Let stand 10 min and cut into bars!

Frozen Hot Chocolate

Ingredients:
6 oz semi sweet chocolate chips
2 C whole milk
1 T + 1 t hot cocoa
3 T sugar
Ice Cubes
Whipped cream

Prep:
Place chocolate and 1/4 C milk in microwave to melt.

Add chocolate mix and sugar, stir

Slowly pour in 1/2 C milk and stir, let cool to room temp

Pour cooled chocolate into blender and add remaining milk, and ice...puree

Top with whipped cream and chocolate chips, etc.!

It's a BOY punch! (or girl!)

IT'S A BOY! punch...you can switch this to a girl with red/pink :)

Ingredients:
1 Jug blue fruit punch
2 liter bottle Ginger ale
1 bottle white grape juice
8 Scoops pineapple sherbert
rubber ducks

Prep:
chill ginger ale and white grape juice in freezer 3 hours prior to party.

Remove sherbert from freezer 1/2 hour before serving.

In punch bowl dump all ingredients together, adding sherbert last.

Comeback Sauce

This is delicious! We use this on chicken nuggets, french fries, everything!

Ingredients:
1 C Dukes Mayo
1/4 C heinz ketchup
1/4 C chili sauce
1 heaping tsp dijon mustard
1 t onion powder
2 t worcestershire sauce
1 t ground black pepper
1/4 t tobasco sauce
1/4 C EVOO
1 Lemon (the juice)

Prep:
Mix all ingredients well and store in fridge over night.

Chicken and Brocolli Casserole

Ingredients:
Shredded/cooked chicken (whole)
2 cans cream of chicken soup
1 C mayo
1 C shredded cheddar cheese
1 C colby/mnterrey Jack cheese
1 bag frozen brocolli, thawed/chopped
salt and pepper to taste

Prep:
Mix all ingredients together

transfer mixture to a lightly greased casserole dish and heat oven to 375

Cook 30 minutes or until bubbly

Can serve on top of a bed of rice, delish!

Philly Cheesesteak sloppy Joes

Ingredients:
1 T EVOO
1 lb. hamburger (or steak)
1 Onion, chopped
1 green pepper, Chopped
2 T A1
1 C beef stock
salt/pepper to taste
4 buns
1 T butter
1 T flour
1 C milk
1 C shredded provolone cheese

Prep:
Add oil, brown meat

Add onion, green pepper and cook until tender

Stir in A1 and beef stock, season with Salt and Pepper.  Bring to a bubble and cook 1 minutes

Split open rolls and remove inside-of bottom roll to hold meat.

Melt butter on stove, stir in flour (about 1 min) whisk in milk, bring to a bubble to thicken (about 2 min) turn off heat and stir in cheese.

3 cheese Chicken Penne Pasta bake

Ingredients:
1 lb. chicken, bite size
1 1/2 C penne pasta
1 14 oz. jar spaghetti sauce
1 14 oz. can diced tomatoes
2 T parm cheese
1 9 oz pkg freesh spinach
1 t dried basil
2 oz. cream cheese
1 C mozzarella cheese

Prep:
Cook pasta adding spinach to boiling water for the last 1 minute

cook chicken and basil in large skillet on medium-high for 3 min and add sauce and tomatoes, bring to a boil, simmer 3 min or until chicken is done.  Stir in cream cheese.  Drain pasta and return to pan. Stir in chicken mixgture and 1/2 C Mozzarella.  Spoon into 9x13 pan.

Bake 375 for 20 min sprinkle with cheese and bake 3 minutes longer.

Lasagna Soup

Ingredients:
2 T olive oil
1 lb. italian sausage
3 C chopped onions
4 Garlic cloves, minced
2 t dried oregano
1/2 t red pepper flakes, crushed
2 T tomatoe paste
1 28oz can fire roasted diced tomatoes
6C chicken stock
8 oz fusilli pasta
salt and pepper to taste

Cheesy yum on top:
8 oz. ricotta cheese
1/2 C grated parm
1/4 t salt
pepper
2 C shredded mozzarella cheese

Prep:
Heat EVOO, add sausage and brown.  Add onions until soft.  Add garlic, oregano and red pepper flakes.  Add tomato paste- stir well.  Cook until paste is rusty brown.

Add diced tomatoes and chicken stock.  Stir bring to a boil and reduce heat, simmer 30 min.  Add uncooked pasta and cook until soft.

Cheese yum: Combine ricotta, parm and salt and pepper.  Sprinkle Mozzarella on top!

White trash dip

White Trash Dip- this was a super bowl Sunday FAVORITE!
Served with Artisan chips- these are great chips and come in 3 different flavors!

Ingredients:
2 bags Artisan tostitos
2 pkgs cream cheese, softened
1 15 oz can chili
2 c shredded cheddar cheese
1 lb bacon
1 t red pepper flakes
4 green onions, chopped

Prep:
preheat oven to 350

cook bacon and crumble

Mix together: Chili, cream cheese, cheddar cheese, bacon and green onions.

Spread mixture into pie pan and cook for 20 min.

Sprinkle top with red pepper flakes and some of the green onions for garnish.

Bacon Cheeseburger Meatloaf

Bacon Cheeseburger Meatloaf

Ingredients:
6 slices bacon
1 lb hamburger
1/4 C bread crumbs
1 packet of onion soup mix
1 egg
Ketchup, to taste
1 1/2 C shredded cheddar cheese

Prep:
Cook bacon and crumble

mix ground beef, 1/4 C bread crumbs, onion soup mix, crumbled bacon, egg, ketchup and cheese.

Mix with hands and press into a loaf pan.  top with additional cheese, uncooked bacon strips and ketchup.

Bake on 400 for 1 Hr. will feed 4

Pizza Dip and French Bread

Pizza Dip
I served with homemade garlic bread (made from a loaf of french bread) and made a caesar salad!

Ingredients:
4 oz. cream cheese, softened
1/4 C sour cream
1/4 C mayo
1/2 C mozzarella, grated
1/4 C parmesan cheese, grated
1 C pizza sauce
2 Oz. pepperoni
Green pepper
Black olives

Prep:
Mix cream cheese, sour cream, mayo, mozzarella and parm cheese and spread across bottom of pan.

Spread pizza sauce on top and sprinkle with additional cheese, pepperoni, green pepper and olives.

Bake at 350 for 25 min.

Loaded Baked Potato Soup

Looking for a delicious, homemade, Potato soup? Who doesn't love this on a cool winter night?

Ingredients:
1 Pound bacon
1 yellow onion, chopped
1 Large carrot, peeled and diced
3/4 C Celery Flakes
4 Large Potatoes
1/4 C Flour
2 C chicken stock
Salt and Pepper to taste
4 C Heavy whipping cream (*Note: you can use whole milk instead to be healthier!- you will need around 5-6 cups of whole milk and about a 1/2 C Flour if you go that route)

Garnishes:
-Chives
-Bacon
-Sour Cream
-Chedder and Mont Jack cheese

Prep:
In EVOO cook onions, carrots and celery flakes until the onions are translucent.  Add potatoes and cook for 5 minutes, stir occasionally. 

Whisk in flour and stirover low heat until thicker (about 5-7 min) Add chicken stock and 1/2 bacon, and season with Salt/Pepper to your taste.  (remember the less salt, the better the sodium level!)

Over med heat, bring soup to a simmer and cook 25 minutes or until potatoes are soft. Mash some potatoes for a thicker texture (I mashed 1/2 of mine!)  Add whipping cream and simmer for 5 minutes.

Season to taste and garnish!


I served mine with a yummy bread... here is the recipe!
Ranch Bread:
Ingredients:
1 Loaf sour dough bread(round)
1/2 Lb sliced thin cheddar cheese from the deli
3 oz. Oscar Meyer real bacon bits
1/2 C butter, melted
1 T Ranch dressing mix

Prep:
Cut the bread into diagnal slices, but do NOT cut through the bottom of the bread.

Place slices of cheese in cuts

sprinkle bacon bits on bread in between slices

mix butter and ranch dressing mix and pour over bread making sure to get it into the slices

Wrap entire loaf in foil and place on baking sheet

Bake 350 for 15 minutes, then unwrap and bake 10 minutes.


Mexicorn Dip


It's Mexican night!

This dip is beyone delicious! I serve this with Frito Scoops chips and I also made Chicken fajita tacos to go with this!

Ingredients:
1 bag Frito Scoops
2 cans mexicorn
1 can Rotel (the regular is plenty spicy!)
2 C shredded cheddar cheese
6 green onions, chopped
1 C Mayo (I used Olive Oil Mayo)
1 C Sour Cream (I used light to make it healthier)

Prep:
Simply mix all ingredients together, draining the rotel and sit in fridge for 2 hours to chill and season!

Dip fritos in and enjoy!
