Taco Stuffed Shells

Ingredients:

1/2 C bread crumbs
1 T oil
1 onion, diced
2 cloves garlic
1 lb ground beef
2 T taco seasoning
1 C tomato puree
1 C corn
1 C black beans
4 oz cream cheese
hot sauce to taste
salt/pepper to taste
1 T butter, melted
1 C salsa, I use mild
1 lb large pasta shells/cooked
1 C cheese- mexican shredded

Prep:

Heat oil in a large pan over med heat

Add onions, and saute until tender (about 6 min)

add garlic and saute until fragrant, about a min

add ground beef and cook until brown

add taco seas, tom puree, corn, black beans and cream cheese.  cook until cream cheese has melted

season with hot sauce, s/p

spread the salsa into large bakikng dish, stuff the shells with beef mixture and place them in salsa

mix butter into bread crumbs and sprinkle onto shells, followed by cheese

bake 350 for 25 min.
