Ham and Cheese potatoes

Ingredients:
32 oz. pkg frozen straight cut french fries
1 onion, chopped
2 cloves garlic, minced
1 1/4 cups cubed ham
1 C shredded swiss cheese
1 10 oz. can cream of potato soup
1/2 C ricotta cheese
1/8 t pepper
1/2 t dried marjoram
1 1/2 C frozen baby peas, thawed
1/4 c grated parmesan cheese

Prep:
in a slow cooker, combine potatoes, onions, garlic, ham and swiss cheese. mix well. In medium bowl, combine soup, cheese, pepper and marjoram.  Pour over potato mixture.

Cover and cook on low for 8-9 hours or until potatoes are tender.  Stir in peas and parm cheese. Cover and cook on high for 30-40 minutes or until peas are hot.  Serve immediately.

M&M Sugar cookies

Ingredients:
2 1/4 C all purpose flour
1 t baking powder
1/2 t baking soda
1/2 t salt
1 1/2 C sugar
2 oz cream cheese- cut into 8 pieces
6 T unsalted butter, melted
1/3 C veg oil
1 large egg
1 T milk
2 t vanilla extract

Prep:
Preheat oven to 350

line 2 baking sheets with parchment paper

in medium bowl, whisk together flour, baking powder, baking soda and salt- set aside

Combine 1 1/2 C sugar and cream cheese in a large bowl.  Put the remaining 1/3 C sugar in a pie plate and set aside (to roll dough in later)  Pour t he warm butter over the cream cheese mixture and whisk. The mix won't be totally smooth yet- whisk in the oil then egg, milk and vanilla.  Whisk until smooth.

Use a rubber spatula to fold into the dry mixture the wet.  When dry ingredients are added add m&ms.  Continue mixing until a soft dough forms.  Refrigerate 2-3 hours, then roll dough in sugar and cook 10 minutes. Do not over cook!

Pumpkin fluff dip

Ingredients:
16 oz.cool whip
small instant vanilla pudding
1 can pumpkin
1 t pumpkin pie spice

Prep:
Serve in a pumpkin with chocolate graham crackers or ginger snaps

mix together pudding, pumpkin and spice.

Fold in whip cream
Ingredients:
4 C apple cider (tree-top brand)
3 T caramel syrup (smuckers)
1/2 T ground cinnamon
1/4 T ground cloves
whip cream

Prep:
Mix all together- stir and cook on low for 4 hours

Crock pot chicken taco Salad chili

Ingredients:
1 onion, chopped
Mexican cheese, shredded
Sour cream
Fritos (topping)
1 16 oz. can black beans
1 16 oz. kidney beans
1 8oz. can tomato sauce
10 oz frozen corn kernels
2 14.5 oz. can diced tomatoes
1 pkt taco seasoning, mild
1 T cumin
1 T chili powder
4 boneless skinless chicken breast
1/4 C cilantro

Prep:
Combine beans, onion, tomatoe sauce, cumin, chili powder and taco seasoning in slow cooker.

Place chicken on top and cover.

high- 6 hours Low-10 hours

half hour before serving remove chicken and shred return and stir.

Top with cilantro, cheese, sour cream and fritos

Ranch cheesy bread

Ingredients:
1 loaf sour dough bread, round
8 slices of cheddar cheese, thinly sliced
3 oz bag oscar meyer real bacon bits
1/2 C butter, melted
1 T ranch dressing mix

Prep:
cut the bread into diagnal slices (don't cut through the bottom!)

Place slices of cheese in cuts

sprinkle bacon bits on bread between slices

Mix butter and ranch dressing mix pour over bread.

Wrap entire loaf in foil and place on baking sheet. Bake 350 for 25 min- unwrap and bake another 15 minutes

Chicken and Broccoli Casserole

Ingredients:

Shredded/cooked chicken (whole)
2 cans cream of chicken soup
1 C mayo
1 C shredded cheddar cheese
1 C colby/monterrey jack cheese
1 bag frozen broccoli, thawed and chopped
Salt and pepper to taste

Prep:
Mix all ingredients together

transf. mixture to a lightly greased casserole dish and heat oven to 375

cook 30 min or until bubbly

I like to serve on top of a bed of rice

Crock Pot Ham and beans with southern homeade corn bread

Ham and Beans:

Ingredients:

1 lb. pkg dried northern beans
1 lb. diced ham
2 tsp onion powder
6 C water
Salt and pepper to taste

Prep:

Rinse and sort beans

Add rinsed beans, onion powder, salt and pepper and ham to crock pot.  Add water, cover and cook on low 8 hours.

CORN BREAD:
Ingredients:
1 C Cornmeal
1/2 C flour
1 egg
1 1/4 C buttermilk
1 T oil

Prep:
Pour oil in 8" iron skillet.  Place skillet in oven.  Heat to 425 with skillet inside.

Combine remaining ingredients.  Batter should be the consistence of waffle batter.

Once the oven is preheated, remove skillet and pour in the batter.  Bake for 30 min or until golden brown.

Crock pot Coca Cola pot roast

Ingredients:

McCormicks slow cooker savory seasoning packet
Au Jus packet
1 can coke
boneless cross rib roast

Prep:

Put roast in crock pot

Mix the slow cooker seas packet with 1 C water and pour on top of roast.

Add whole can of coke

Cover and cook 8 hours low or 4 hours high

right before you pull it out, sprinkle the dry au jus packet over the roast.

Crock Pot Ranch pork chops

Ingredients:

pork chops (I use 5) we like left overs :)
Ranch seasoning dry mix packet
1 can cream of chicken soup
1 can water

Prep:

Combine and mix well

cook on low 4-6 hours

I serve with mashed potatoes and corn

Rootbeer Pulled Pork- Slow cooker

Ingredients:

1 2lb. pork tenderloin
1 12 oz. can rootbeer
1 18oz. BBQ sauce
hamburger buns

Prep:

Put pork in slow cooker and pour root beer over meat.  Cover and cook on low 6 hours.

After pork has cooked, drain rootbeer.  Shred the pork and place it back in the slow cooker.  Pour the bbq sauce and stir to combine.

Serve on hamburger buns with coleslaw.

Cream Cheese Danish

Ingredients:
2 8oz crescent rolls
2 8 oz cream cheese
1 C sugar
1 tsp vanilla extract
1 egg
 
Prep:
Heat oven to 350
 
Grease 9x13 pan
 
spread out one pack of the crescent rolls
 
mix cream cheese, sugar, vanilla and egg with blender and spread
 
Spread other roll of cresent rolls and brush milk on top and sprinkle with sugar and cinnamon
 
Cook 30 minutes on 350

Taco Stuffed Shells

Ingredients:

1/2 C bread crumbs
1 T oil
1 onion, diced
2 cloves garlic
1 lb ground beef
2 T taco seasoning
1 C tomato puree
1 C corn
1 C black beans
4 oz cream cheese
hot sauce to taste
salt/pepper to taste
1 T butter, melted
1 C salsa, I use mild
1 lb large pasta shells/cooked
1 C cheese- mexican shredded

Prep:

Heat oil in a large pan over med heat

Add onions, and saute until tender (about 6 min)

add garlic and saute until fragrant, about a min

add ground beef and cook until brown

add taco seas, tom puree, corn, black beans and cream cheese.  cook until cream cheese has melted

season with hot sauce, s/p

spread the salsa into large bakikng dish, stuff the shells with beef mixture and place them in salsa

mix butter into bread crumbs and sprinkle onto shells, followed by cheese

bake 350 for 25 min.

Chocolate Eclair Cake

Ingredients:

1 box graham crackers
1 lg french vanilla pudding box
cool whip
chocolate frosting

Prep:

Lay graham crackers to cover bottom

layer pudding

Layer graham cracker

layer pudding

graham cracker

chocolate icing (I warm it first)

then refrigerate prior to serving

Pizza Casserole

Ingredients:

1 lb hamburger
1 (14oz) jar pizza sauce
1 8oz pkg shredded mozarella cheese
3/4 C bisquick
2 eggs
1 1/2 C milk

Prep:
Brown meat, place in 8 x8 dish and top with pizza sauce. 

Place cheese on top of sauce

mix bisquick, eggs, milks and beat until smooth.  Pour on top of cheese.

Bake at 400 for 35 min

Frito Taco Bake

Ingredients:

8 oz crescent rolls
2 C corn chips
1 1/2 lb hamburger
1 (15oz) can tomato sauce
taco seasoning
1 (8oz) sour cream
1 (4oz) shredded chedd cheese

Prep:

Unroll dough, press in pan.  Sprinkle with 1 C chips, set aside.

Cook beef

(add in tomato sauce and taco seasoning.  Bring to a boil. reduce heat, simmer 5 min and spoon over chips. Top with sour cream, cheese and remaining chips.

Cook, uncovered for 25-30 min.

Go-to dish for friends when they have surgery, babies, etc.

This is a great go-to dish to bring to someone for a meal!

4-6 raw chicken breast, new potatoes and green beans.

Arrange in 9x13 dish

sprinkle with packet of italian dressing mix and top with a melted stick of butter.

cover with foil and bake at 350 for 1 hour.

Serve with rolls.

Choc chip cookie dough dip

Ingredients:

Vanilla wafers (for dipping)
1/2 C butter
1/3 C brown sugar
8 oz cream cheese, softened
1/2 C powder sugar
2 t vanilla extract
3/4 C mini choc chips

Prep:

Melt butter in pan and dissolve brown sugar into butter.

Cream together cream cheese and powdered sugar.  Add in butter mixture and vanilla.

Mix together.

Stir in chocolate chips.

I serve with vanilla wafers for dipping! YUM!

Frozen Banana Bites

Ingredients:

3 bananas
1/4 C milk chocolate chips
1/4 C PB
coconut flakes

Prep:

Heat up PB and choc chips in microwave.  Stir until smooth.

Dip pieces of banana to cover, in chocolate and place on parchment paper. Sprinkle with coconut and freeze 1 hour before serving.

French toast overnight!

This is a great dish for when you have company! Make it the night before and pop it in the oven the morning of for breakfast!

Ingredients:

1 stick, melted butter
1 loaf sliced french bread
1 1/2 c milk
3/4 c brown sugar
6 eggs
1 t vanilla

Prep:

In 9 x13 pan, mix butter (melted) and brown sigar.  Place french bread flat over butter/sugar mixture.

Mix eggs, milk, and vanilla with hand mixer.

Pour over bread, cover and fridge overnight.

Bake at 40 min. at 350 (covered) then 15 additional minutes (uncovered)

Sprinkle with powder sugar and serve with syrup
